Cinnamon Roll Bread Pudding with Candied Blueberries

4 cinnamon rolls days old
2 tsp butter (melted in microwave and drizzled over rolls)
1 cup of candied blueberries 
1 cup of milk|1 cup sugar
2 eggs
1 tsp vanilla
dash of salt 
1/3 cup of heavy cream

Tear up rolls into pieces mix in blueberries and place in small baking dish. Drizzle butter over torn up rolls. In a separate bowl mix the rest of the ingredients and blend well.
Pour mixture over the the rolls  and top off with the heavy cream and
I like to add a tablespoon of sugar on top. Place in a preheated 350 degree oven
and bake 
for 30 minutes or until browning on top with liquid consumed by the bread.


This whole recipe was from boo-boos. First, I like to buy the frozen bread in 3 loaf packages since bread has gotten so expensive. It is only about a $1 per loaf this way. But alas when I went to bake
one loaf they were all three frozen together so hard I had to thaw them all out. (I usually check that at the store) So, I got to thinking “What can I do with THREE loaves of bread?” I didn’t need three baked loaves! The idea popped up to make cinnamon rolls from two of the loaves. All Recipes is one of my favorite go to’s for ideas and they didn’t fail me this time. I searched for recipes using frozen bread dough for cinnamon rolls and voila there it was their recipe for Bread Pudding. (But I could have made homemade donuts too!)

Then, the next whoopsie was my blueberries. I bought them weeks ago and to stave off molding of the fruit I put 2 tablespoons of sugar on them and put them in a storage container. I shook them around to make sure everybody got a good coating of sugar. They were in the fridge for a week or better before I used them in this bread pudding, so you might say were “candied”.

I froze some of my cinnamon rolls and the rest I put down in the Tea Room for our campers. Yesterday when I was doing campground duties, I saw the leftover rolls and brought them up to the house. This morning I thought I would make a bread pudding with them and searched for Cinnamon Roll Bread Pudding. Once again, All Recipes hit it on the nose. This is their basic recipe cut in half and using my 1 cup of candied blueberries instead of raisins. My oh my-it is delicious. I did one extra step that is not in their pudding recipe. This is a hack from the cinnamon rolls-I poured 1/3 cup of heavy whipping cream on top and sprinkled some extra sugar around. If you are thinking I have a sweet tooth you are absolutely correct. So, if you don’t -just leave off the extra sugar.

I baked it in a Pyrex 7x7 ‘ish baking dish (but to pretty it up you could use a ramekin) at a preheated 350 degrees for at least 30 minutes. I will make a full recipe next time because this is scrumptious!
